Winter salad

Ingrediants:

  • 3.5 oz blanched almonds
  • 2 tablespoons harissa paste
  • 3.5 oz quinoa
  • some red and green salad leaves
  • some mint leaves
  • 100 dried sour cherries
  • 7 oz firm goat’s cheese
  • 1 onion
  • olive oil

Preparation:

Soak the almonds with warm water about 15 min, until softened. Drain, then put in a bowl with 2 tablespoons harissa paste. Heat the oven to 180 c. Meanwhile place the quinoa in the pot, and cover with water. Turn the oven to the highest temperature while boiling then lower the temperature and allow to boil over 15 min and drain. While the quinoa is cooking, put the nuts on a baking sheet, spread out evenly and roast for 10 minutes, turning once, until golden. In a serving bowl put the salad leaves,top with the quinoa, onions, mint leaves and sour cherries. Cut cheese into cubes and add it from above. Finally add the almonds.
