Pumpkin Chocolate Superfood Cookies Recipes
This Recipe is super delicious and easy to make. Please note that there is no sugar.
1/4 teaspoon baking soda
1/4 teaspoon baking powder
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon cloves
1/4 cup organic extra virgin coconut oil, melted
1 tablespoon freshly grated ginger
1 cup pumpkin puree
12 pitted dates
1/4 cup plus 2 tablespoons water
1/2 cup white raisins
1/4 cup raw cacao nibs
1. Preheat oven to 350ºF. Line a large baking sheet with parchment paper and set aside.
2. In a medium bowl, whisk together flour, salt, baking soda, baking powder and spices. Set aside.
3. In a Blender add the coconut oil, ginger, pumpkin, dates, and water. Process until smooth and creamy, about 2 minutes. Add the wet ingredients to the dry ingredients and stir to combine. Stir in the cacao nibs and raisins. (Note: mixture will seem sort of “doughy”.)
4. Use a tablespoon to scoop up the pumpkin mixture, transfer it to your hands and gently shape into a ball. Place the pumpkin balls on the baking sheet. Bake in the middle rack for 15 minutes or until firm. Let the cookies cool on the baking sheet for at least five minutes. Transfer to a wire cooling rack and cool completely.
